Cajun Wild Turkey



Ingredients:

1 wild turkey breast (about 2 - 3 lbs) cut into 1/2" - 3/4" chunks
1 lb bacon
1 1/2 cup chopped onion
4 Tbsp butter or margarine
4 Tbsp vegetable oil, divided
1 Tbsp Worcestershire sauce
Cajun poultry seasoning, as needed

Step 1:
Prepare enough white rice for 4 - 6 people.
If you use minute rice, do this step last.

Step 2:
In a large bowl combine turkey, 2 Tbsp oil,
Worcestershire sauce and Cajun seasoning (about 1 Tbsp).
Set aside to marinade.

Step 3:
Cut bacon into 1/4" - 1/2" chunks.
Put bacon in a large frying pan, sprinkle cajun seasoning.
Fry until fairly crisp. Drain greas. Set aside.

Step 4:
In the same large frying pan, saute onion until tender. Set aside

Step 5:
In the same large frying pan, put 3 Tbsp oil, 2 Tbsp butter.
Heat until sizzling.
Add turkey, bacon & onion.
Saute until turkey is brown and tender.

Serve over the rice.
