|6 large tomatoes
||1 large white onion
||1 green bell pepper
||2 fresh jalapeno peppers
||1 bunch cilantro||1 fresh cerano pepper
||1 tsp minced garlic
||2 tblsp lemon juice
||2 tblsp lime juice
|2 tsp salt
||2 tsp black pepper
Cut the tomatoes, onion, bell pepper, and cucumber into 1/4" chunks.
Finely mince the jalapeno peppers, and cerano peppers.
Finely mince the cilantro (get rid of stems first).
Throw the veggies and the juice and spices into a BIG bowl and mix it up.
Add spices to get the taste you like.
Add shredded conch or scallops (cooked and chilled)
Omit the cerano pepper if you do not like spicy salsa.
Get out your deep fryer. A turkey cooker works great. Cut corn tortilla shells into quarters. Fry for about a minute. As soon as you remove them from the grease, salt them. Throw them in a chip basket lined with paper towels to absorb some of the grease.
