Grilled Salmon (or Tuna) Italian Style
Ingredients:
2 Cedar Planks for Grilling (From grocery store or Menards)
Salmon or Tuna Steaks (4) Scale this recipe as necessary
Make a marinade from:
1/2 cup olive oil
6 tbsp. white vinegar
4 tsp. basil
4 tsp. oregano
2 tsp. minced garlic
4 tsp. thyme
4 tsp. salt
4 tsp. black pepper
Directions:
Marinate the fish for a few hours.
While marinating, soak planks under water.
Warm up grill (medium heat).
Place planks on grill, place fish on planks.
Cover grill.
Baste fish occassionally while cooking.
Depending on thickness of fish the cooking should
take about 10 - 15 minutes.
Fish will flake easily when done.
Remove from planks using a spatula.
Optional method:
1/2 bottle of Sun Dried Tomato Vinagrette Salad Dressing
and 4 minced sun dried tomatoes.
Do NOT marinate fish. When 1/2 cooked (on plank of course)
start basting with the dressing / tomatoe mixture.
